Make lime-mint mixture

In a large sturdy pitcher, combine the fresh lime juice and granulated sugar. Stir until the sugar begins to dissolve. Add the fresh mint leaves and, using a wooden muddler or the back of a spoon, gently muddle the mint into the lime-sugar mixture for about 20–30 seconds: press just enough to bruise the leaves and release the essential oils without shredding them.

Sweetener adjustment (optional)

If you prefer a smoother, non-grainy sweetness, substitute the granulated sugar with 1/2 cup simple syrup. If using simple syrup, add it now and stir to combine. Taste and adjust sweetness to your preference.

Combine with soda and ice

Fill the pitcher with cold club soda (about 4 cups) and stir gently to mix. Add the ice cubes to chill the beverage. Taste and adjust: add more club soda for a lighter drink or a bit more lime juice if you want extra tang.

Garnish & Serve

Prepare serving glasses by placing one lime wedge and one small mint sprig into each glass. If you like crushed ice, fill glasses with crushed ice; otherwise fill with a few ice cubes.

Pour the muddled lime-mint mojito base over the ice into each glass, distributing liquid evenly (about 10–12 ounces per serving). Top each glass with extra club soda if needed to fill, and gently stir once to marry flavors.

Garnish each drink with an additional lime slice on the rim and a mint sprig slapped between your palms to release aroma before placing on top. Serve immediately with a straw or stirrer.
