Prepare cheese
If using a block of feta, unwrap and drain any excess liquid. Crumble the feta into chunks so it blends evenly. Bring cream cheese to room temperature for easier whipping.
Blend
In a food processor, combine crumbled feta, softened cream cheese, Greek yogurt, lemon juice, lemon zest, peeled garlic clove, and 2 tablespoons olive oil. Pulse to combine, then run the processor on medium-high until the mixture is very smooth and whipped, 1–2 minutes. Scrape down the bowl as needed.
Adjust texture & seasoning
If the mixture is too thick, add up to 1–2 tablespoons more Greek yogurt or 1 tablespoon water/olive oil and pulse to reach a creamy, spreadable consistency. Taste and season with salt (start with 1/4 tsp) and freshly ground black pepper. Transfer whipped feta to a shallow serving bowl and use the back of a spoon to create a little well in the center for the hot honey.

Infuse honey
In a small saucepan over low heat, combine 1/2 cup honey and 1 teaspoon red pepper flakes. Warm gently—do not boil—until the honey thins and the red pepper fragrance becomes apparent, about 3–4 minutes. Stir occasionally.
Finish hot honey
Remove from heat and stir in 1 teaspoon apple cider vinegar (or lemon juice) and 1/4 teaspoon smoked paprika if using. If you want a slightly glossy, richer honey, stir in 1/2 tablespoon unsalted butter until melted. Taste and adjust heat by adding a pinch more red pepper flakes or a few drops of water to mellow. Let the honey sit 5–10 minutes to infuse, then spoon through a fine mesh to remove larger flakes if you prefer a smooth pour.
Garnish & Serving
Drizzle 1 tablespoon extra-virgin olive oil over the feta and honey. Sprinkle toasted sesame seeds or chopped toasted pistachios and fresh thyme or oregano leaves across the top. Finish with a crack of black pepper and a little lemon zest if desired.
Serve the hot honey whipped feta immediately at room temperature with crusty bread, pita chips, or vegetable crudités. Provide lemon wedges on the side for guests who want extra brightness. Leftover dip can be stored airtight in the refrigerator for up to 3 days; bring to room temperature and stir before serving, and rewarm honey if desired.
