Chill glass
Place a martini or coupe glass in the freezer for at least 5 minutes or fill it with ice water while assembling ingredients to chill.
Prepare shaker
If using egg white, dry shake first: add vodka, pear liqueur, elderflower liqueur, lemon juice, simple syrup, pear purée (if using), and egg white to a cocktail shaker with no ice.
Dry shake (if using egg white)
Seal the shaker and shake vigorously for 10–15 seconds to emulsify and create foam.
Add ice and shake
Open the shaker, add the ice, reseal and shake vigorously for 12–15 seconds until the shaker is very cold to the touch (this chills and dilutes the drink properly). If not using egg white, combine all liquid ingredients and ice in the shaker and shake for 12–15 seconds.
Strain
Discard ice or water from the chilled glass. Double-strain the cocktail into the chilled martini or coupe glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any solids from pear purée or egg white for a silky texture.
Garnish and serve
Float a thin pear slice or a dehydrated pear piece on the surface, or rest a fan of pear slices on the rim. Add an optional lemon twist expressed over the drink for aromatic brightness. Serve immediately.
Notes on balance
Taste and adjust: if the cocktail is too tart, add 0.25 oz more simple syrup; if too sweet, add 0.25 oz more lemon juice. For a lighter pear note, omit the pear purée and use only pear liqueur.
