Prepare
Chill an old-fashioned or rocks glass in the freezer or fill it with ice water to chill while you build the cocktail.
Combine ingredients
In a shaker add 2 oz bourbon, 0.5 oz dark aged rum, 0.75 oz fresh lemon juice, 0.5 oz fresh orange juice, 0.5 oz simple syrup, 0.25 oz allspice dram, 2 dashes Angostura bitters and 0.5 of an egg white if using.
Dry shake (if using egg white)
If you used egg white, seal the shaker and shake vigorously without ice for 12–15 seconds to emulsify and build a frothy texture.
Wet shake
Add ice to the shaker (large ice is fine) and shake hard for 12–15 seconds until chilled and slightly diluted.
Strain
Discard ice or water from the chilled glass. Strain the cocktail over a large ice cube in the chilled rocks glass. If you prefer a neat serve, double-strain into the glass without ice.
Garnish & Finish
Express the orange peel over the drink by holding it skin-side down above the glass and giving it a sharp twist to release oils, then rub the peel around the rim and drop it into the drink.
Optionally grate a small amount of fresh nutmeg over the foam or the drink for a warm, spiced aroma.
Serve immediately and enjoy responsibly.
