Prep

Pat the 8 bone-in wings very dry with paper towels. Trim any excess skin or small bones if needed. Score the thickest part lightly with a small cut to help cook through evenly.

Place the wings in a large bowl.

Dry Rub / Coating

In a small bowl combine 1 tsp kosher salt, 1 tsp black pepper, 1 tsp garlic powder, 1 tsp smoked paprika and 2 tbs cornstarch. Mix thoroughly.

Sprinkle the dry rub over the wings and toss until each piece is evenly coated. Let rest 10–15 minutes at room temperature to allow the cornstarch to adhere (or refrigerate uncovered for up to 1 hour for extra crisping).

Cooking

Preheat oven to 425°F (220°C). Line a rimmed baking sheet with foil and place a wire rack on top. Arrange wings on the rack in a single layer, leaving space between pieces.

Bake for 25 minutes, then flip each wing and continue baking another 12–18 minutes until skin is deeply browned and an instant-read thermometer inserted into the thickest part reads 165°F (74°C). If you want extra crispness, broil 2–3 minutes at the end, watching closely to avoid burning.

Fryer / Air Fryer Alternative

For deep frying: heat oil to 350°F (175°C) and fry wings in batches 8–10 minutes until crisp and cooked through. For air fryer: preheat to 400°F and cook wings in a single layer for 18–22 minutes, shaking or flipping halfway.

Hot Sauce Glaze

While wings are cooking, make the glaze. In a small saucepan over low heat combine 1 cup hot sauce, 4 tbs unsalted butter, 1 tbs brown sugar, 1 tsp apple cider vinegar, 1 tsp Worcestershire sauce, 1 tsp hot honey (optional) and 1 tsp cayenne (optional).

Stir constantly until the butter is melted and the sugar is dissolved, then bring to a gentle simmer for 1–2 minutes to meld flavors. Taste and adjust: add a pinch more sugar or honey to reduce heat, or more cayenne for extra kick. Keep warm on the lowest heat.

Finishing

When wings are cooked and crisp, transfer them to a large clean bowl. Pour the warm hot sauce glaze over the wings and toss gently but thoroughly until every piece is evenly coated.

Return glazed wings to the rack on the baking sheet and place in the oven for 2–3 minutes at 375°F (190°C) to set the glaze, or briefly under the broiler for 30–45 seconds to caramelize (watch carefully).

Serve

Transfer wings to a platter. Sprinkle with chopped fresh parsley if using. Serve immediately with celery sticks, carrot sticks and 1 cup blue cheese dressing or ranch for dipping.

Leftovers can be refrigerated in an airtight container for up to 3 days. Reheat in a 375°F oven for 8–10 minutes to refresh crispness, or in an air fryer for 4–6 minutes.
