Preparing the Base

    In a large pot, bring 3 cups of water to a boil. Stir in the cornmeal and salt, whisking continuously to avoid lumps. Reduce heat to low and cook for about 10-15 minutes, stirring frequently until thickened. Remove from heat and let it cool slightly.

Making the Filling

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and bell pepper, sautéing until they become soft and translucent, about 5-7 minutes.

    Stir in the shredded chicken, frozen corn, cumin, paprika, black pepper, and garlic powder. Cook for another 5 minutes, stirring occasionally until everything is heated through.

    In a greased baking dish, spread half of the cornmeal mixture evenly on the bottom. Add the filling mixture on top and then cover with the remaining cornmeal mixture.

    Preheat the oven to 375°F (190°C). Bake the assembled Vago Madrecuixe for 25-30 minutes or until the top is golden brown.
