Scallion Pancake

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Gradually add boiling water to the mixture while stirring with a chopstick or fork until it forms a shaggy dough.

    Knead the Dough

    Once the dough is cool enough to handle, knead it on a floured surface for about 5-7 minutes until smooth and elastic. Cover with a damp towel and let it rest for 30 minutes.

    Roll the Pancakes

    Divide the dough into four equal pieces. Roll one piece into a thin circle on a floured surface. Brush lightly with vegetable oil and sprinkle 1/4 of the chopped scallions evenly over the surface.

    Roll and Shape

    Starting from one edge, roll the dough tightly into a log. Then coil the log into a round shape. Flatten gently with your palm and roll it out again into a thin circle.

    Cook the Pancakes

    Heat a skillet over medium-high heat and add vegetable oil. Cook each pancake for about 2-3 minutes on each side until golden brown and crispy. Drain on paper towels.

    Mix the Spice Blend

    In a small bowl, combine the poppy seeds, sesame seeds, garlic powder, onion powder, and sea salt. Mix well and set aside.

Assembly

    Assemble the Dish

    Spread cream cheese evenly over each scallion pancake. Layer with slices of smoked salmon, then sprinkle with the everything spice blend and chopped dill.

    Serve

    Cut the pancakes into wedges and serve with lemon wedges on the side for an extra burst of flavor.
