Prepare the Glass
Begin by rinsing a chilled coupe or cocktail glass with absinthe. Swirl it around to coat the inside of the glass, then discard the excess absinthe.

Mix the Cocktail
In a mixing glass filled with ice, combine 2 oz of rye whiskey, 1 tsp of demerara sugar, and 2 dashes of Peychaud's bitters.

Stir the Mixture
Stir the mixture for about 20-30 seconds until well chilled and diluted.

Strain and Serve
Strain the mixture into the prepared absinthe-rinsed glass. Optionally, garnish with a lemon twist or a cherry if desired.
