Preparation

    Prepare Hibiscus Infusion

    In a small saucepan, bring 1 cup of water to a boil. Remove from heat and add the dried hibiscus flowers. Let steep for 10 minutes. Strain and set aside to cool.

    Prepare Persimmons

    Peel the persimmons and remove the seeds. Chop them into small pieces and mash them into a puree using a fork or blender.

    Juice the Lime

    Cut the lime in half and juice it, measuring out about 1 tablespoon of fresh lime juice.

Mixing

    Combine Ingredients

    In a cocktail shaker, combine the rum, falernum, persimmon puree, lime juice, and cooled hibiscus infusion. Add ice and shake well until chilled.

    Strain and Serve

    Strain the mixture into a chilled cocktail glass. Add 5 dashes of Angostura bitters on top.

    Garnish

    Optionally, garnish with a slice of lime or a few dried hibiscus flowers for presentation.
