Meatballs Preparation

Mix the Meatball Ingredients
In a large mixing bowl, combine the ground chicken, minced lemongrass, minced garlic, grated ginger, fish sauce, egg, panko breadcrumbs, salt, and black pepper. Mix until well incorporated.

Form the Meatballs
Using your hands, form the mixture into small meatballs, about 1 inch in diameter. Place them on a baking tray lined with parchment paper.

Cook the Meatballs
Preheat the oven to 180°C (350°F). Bake the meatballs for 20-25 minutes or until cooked through and golden brown.

Combine the Glaze Ingredients
In a small saucepan over medium heat, whisk together the smoked miso paste, maple syrup, soy sauce, and rice vinegar. Cook for 2-3 minutes until the mixture is heated through and slightly thickened.

Glaze the Meatballs
Once the meatballs are cooked, brush the smoked miso maple glaze over the meatballs generously.

Make the Purée
In a blender, combine the blueberries, chopped shiso leaves, honey, and water. Blend until smooth. If the mixture is too thick, add a little more water until desired consistency is reached.
