Preparation
1. Rinse the Rice
In a fine mesh strainer, rinse the basmati rice under cold water until the water runs clear. This helps remove excess starch.
2. Marinate the Chicken
In a bowl, combine the diced chicken with turmeric powder, cumin seeds, coriander powder, red chili powder, salt, and black pepper. Let it marinate for at least 30 minutes.
Cooking
3. Sauté the Vegetables
In a large pot or pan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Then add the minced garlic and grated ginger, cooking for another minute until fragrant.
4. Add Chicken and Cook
Stir in the marinated chicken and cook for about 7-10 minutes, or until the chicken is browned and cooked through.
5. Incorporate Tomatoes and Peppers
Add the chopped tomatoes and green bell pepper to the pot. Stir well and cook for an additional 5 minutes, allowing the tomatoes to soften.
6. Add Rice and Water
Add the rinsed basmati rice to the pot, followed by the water. Stir to combine everything. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and water is absorbed.
7. Finish with Garam Masala
Once the rice is cooked, remove the pot from heat and let it sit covered for 5 minutes. Then fluff the rice gently with a fork and stir in the garam masala.
Serving
8. Garnish and Serve
Transfer the rice and chicken mixture to a serving platter. Garnish with chopped cilantro and serve with lemon wedges on the side.
