    Prep potatoes

    Wash potatoes well and trim any dark spots; leave skins on. Cut into uniform 1-inch cubes so they cook evenly.

    Boil potatoes

    Place cubed potatoes in a large pot and cover with cold water by about 1 inch. Add 1 teaspoon kosher salt. Bring to a gentle boil over high heat, then reduce to a simmer and cook until potatoes are fork-tender, about 10–12 minutes. Start checking at 8 minutes to avoid overcooking.

    Cook eggs

    While potatoes cook, place eggs in a small saucepan, cover with cold water by 1 inch, bring to a gentle boil, then remove from heat and cover. Let sit 10 minutes for hard-cooked yolks. Transfer eggs to an ice bath; peel when cool and chop coarsely.

    Drain & cool potatoes

    Drain potatoes in a colander and spread on a rimmed sheet pan to steam off and cool for 8–10 minutes. This dries them slightly so they absorb the dressing without becoming mushy.

    Dice vegetables

    While potatoes cool, finely dice celery and pickles, and thinly slice green onions. Chop parsley and set all aside.

Dressing

    Mix dressing

    In a medium bowl, whisk together mayonnaise, sour cream, Dijon mustard, apple cider vinegar, granulated sugar, smoked paprika, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper until smooth and emulsified. Taste and adjust seasoning — dressing should be bright and slightly tangy.

    Combine salad

    Place cooled potatoes in a large mixing bowl. Add chopped eggs, diced celery, diced pickles, and most of the sliced green onions (reserve a little for garnish). Pour dressing over the potato mixture and gently fold with a spatula until evenly coated. Be careful not to overmix or mash the potatoes; use folding motions to preserve chunkiness.

    Adjust seasoning & rest

    Taste and add additional salt, pepper, or 1–2 teaspoons apple cider vinegar if needed for brightness. Cover and refrigerate for at least 2 hours (preferably 4) to allow flavors to meld.

    Before serving, stir salad gently and transfer to a serving bowl. Sprinkle sweet paprika evenly over the top, scatter reserved green onions and chopped chives, and finish with remaining chopped parsley.
