Prepare the pork
Pat the pork steaks dry with paper towels. Trim any excessively thick fat if needed, but leave some fat for flavor.

Make seasoning blend
In a small bowl combine kosher salt, black pepper, garlic powder, smoked paprika and brown sugar. Stir to evenly distribute the sugar and spices.

Marinate
Rub the pork steaks all over with olive oil. Sprinkle the seasoning mix evenly over both sides of each steak and rub it in. Drizzle apple cider vinegar and Worcestershire sauce over the steaks and rub again to coat. Place steaks in a dish or resealable bag and refrigerate for at least 30 minutes, ideally 2–4 hours. If short on time, you can cook immediately after a 15-minute rest at room temperature.

Preheat pan and oven (if using)
Preheat oven to 375°F (190°C) if you prefer to finish in the oven. Heat a heavy skillet (cast-iron preferred) over medium-high heat until very hot.

Sear the steaks
Add 1 tablespoon olive oil (or a thin film of oil) to the hot pan. Place pork steaks in the skillet without crowding. Sear 3–4 minutes on the first side without moving until a deep golden-brown crust forms. Flip and sear the other side 2–3 minutes.

Finish cooking
Pour stock into the pan and add mustard, scraping any browned bits from the bottom (deglaze). If finishing on the stovetop, cover and simmer gently for 6–8 minutes, turning once, until internal temperature reaches 145°F (63°C). If using the oven, transfer the skillet to the preheated oven and roast 8–10 minutes until 145°F (63°C) internal temperature measured at the thickest part.
