Prep & Warm Bases

    Warm refried beans

    Place refried beans in a small saucepan over low heat. Stir occasionally until warmed through, about 6–8 minutes. If too thick, stir in 1–2 tablespoons of water to reach a spreadable consistency. Keep warm on the lowest heat or transfer to a small slow cooker on warm.

    Heat nacho cheese

    Warm nacho cheese sauce in another small saucepan or microwave-safe bowl until pourable (about 1–2 minutes in microwave, stirring every 30 seconds). Maintain warm.

    Arrange chips

    Spread tortilla chips on a large, heatproof serving tray or lay out individual plates for self-serve. Leave space for warm toppings and bowls for cold toppings.

Cook Proteins

    Brown ground beef

    Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add finely chopped onion and sauté 3–4 minutes until translucent. Add minced garlic and cook 30 seconds. Add ground beef and cook, breaking up with a spoon, until browned and no longer pink, about 6–8 minutes.

    Season beef

    Stir in chili powder, ground cumin, smoked paprika, salt, black pepper and tomato paste. Cook 1 minute to bloom spices. Add beef broth (or water), reduce heat to medium-low, and simmer 3–4 minutes until mixture is saucy but not watery. Taste and adjust seasoning. Transfer to a serving bowl and keep warm.

    Prepare chorizo

    If chorizo is raw, brown it in a separate skillet over medium heat until fully cooked (5–7 minutes), breaking up into crumbles. If pre-cooked, warm briefly in a pan until just hot. Drain excess oil and transfer to a serving bowl.

    Warm black beans

    Warm rinsed black beans in a small saucepan over low heat with a pinch of salt and a tablespoon of water, about 3–4 minutes, stirring occasionally. Keep warm.

Assemble Topping Bowls

    Place warmed refried beans, nacho cheese, seasoned ground beef, chorizo, and warmed black beans in separate shallow bowls for guests to scoop over chips.

    Arrange shredded cheddar, cotija, pico de gallo, diced tomatoes, diced red onion, green bell pepper, sliced jalapeños, pickled jalapeños, guacamole, sour cream, sliced green onions, chopped cilantro, lime wedges, and hot sauce in separate bowls. Place crumbed tortilla strips or chicharrón in a small bowl for added crunch.

    Guide guests (or yourself) to build nachos: start with a layer of chips, add spoonfuls of refried beans and/or nacho cheese for a stable base, then add ground beef or chorizo and black beans. Scatter shredded cheddar and a little cotija, then add fresh toppings: pico, tomatoes, onions, bell pepper, jalapeños, guacamole and a dollop of sour cream. Finish with cilantro, green onions, a squeeze of lime, and hot sauce to taste. For best results, if you want melty cheese, build nachos on an oven-safe tray, sprinkle shredded cheddar over assembled chips and protein, and broil 2–3 minutes until cheese melts—watch closely to avoid burning.
