    Measure and prepare

    Gather all spices and measure them precisely into a medium mixing bowl. Use packed measurement for the brown sugar so texture is consistent.

    Combine ingredients

    Add smoked paprika, kosher salt, brown sugar, granulated garlic, onion powder, black pepper, ground cumin, dry mustard, cayenne, dried oregano, and optional chili powder to the bowl.

    Blend

    Whisk the mixture thoroughly for 1–2 minutes until evenly distributed and there are no lumps in the brown sugar. Use a fork to break any clumps. If you prefer a finer texture, pulse the mix 2–3 times in a spice grinder or clean coffee grinder and then rewhisk.

    Taste and adjust

    Taste a tiny pinch (optional). Adjust salt, heat (cayenne/chili), or sweetness (brown sugar) to your preference. Remember the rub will be more subtle after cooking, so err slightly toward bolder flavor.

    Store

    Transfer the rub to an airtight jar. Store in a cool, dark place for up to 6 months. Label with the date. For best flavor, use within 2–3 months.

    Prep protein or vegetables

    Pat the meat or vegetables dry with paper towels. For large cuts (ribs, brisket, pork butt) let the surface come to near room temperature for 30–60 minutes for better penetration.

    Adhere rub

    Rub a thin coat of neutral oil or a light brush of mustard over the surface to help the Magic Dust stick. Use about 1 tablespoon oil per pound of protein; for vegetables use 1–2 teaspoons per piece.

    Apply Magic Dust

    Generously sprinkle the Magic Dust over the surface and then massage and pat it in with your hands so it forms an even coat. For a light crust, use about 1–2 tablespoons per pound; for heavy bark, use 3–4 tablespoons per pound.

    Let the seasoned protein rest for 15–30 minutes if cooking immediately, or refrigerate uncovered for up to 24 hours to develop a deeper crust and better flavor penetration. If refrigerating, bring back to room temperature for 30–60 minutes before cooking.

    Grill, smoke, roast, or pan-sear as desired. Example: for grilled chicken breasts, cook over medium-high heat 6–8 minutes per side until internal temperature reaches 165°F (74°C). For pork ribs or brisket, cook low and slow until tender (smoking 225°F/107°C until desired tenderness).
