Cheeses

Method

Cheeses

  1. 1

    Temper and prep cheeses

Remove all cheeses from refrigeration 30–60 minutes before serving so they come to room temperature. This enhances flavor and texture.

  2. 2

    Portion and arrange

If cheeses are whole wheels or blocks, cut one or two wedges from each to show interior texture and keep remaining pieces accessible for later. For the soft goat cheese, place whole log or spoonable portion into a small bowl for easy spreading.

  3. 3

    Knife placement

Provide a separate knife or spreader for each cheese (hard, soft, and spreadable) to avoid flavor transfer.

Cured Meats

  1. 4

    Slice and fold

If meats are not pre-sliced, slice thinly against the grain. For presentation, create a variety of shapes: fold prosciutto into loose ribbons or rosettes, stack and fan soppressata or salami slices, and slightly overlap coppa into small piles.

  2. 5

    Portioning

Plan for 2–3 oz of cured meat per person across selections. Arrange meats in small clusters across the board so guests can combine with different cheeses.

Accoutrements & Spreads

  1. 6

    Small bowls

Place mustard, honey, and jam/chutney into small ramekins or bowls. Position them near cheeses that pair well: honey near aged cheddar or goat cheese; fig jam near Manchego or Gruyère; mustard near salami.

  2. 7

    Olives, pickles, and nuts

Drain any excess brine from olives and cornichons. Place olives, pickles, and nuts in small piles or bowls to prevent them from rolling around the board.

Fresh Fruit & Produce

  1. 8

    Prepare fruit

Wash grapes and dry thoroughly. Slice pears or apples right before serving and brush lightly with lemon juice to prevent browning. Halve fresh figs and place cut-side up for visual appeal.

Breads & Crackers

  1. 9

    Toasting and placement

Lightly toast baguette slices until just crisp. Arrange crackers in small stacks or fan shapes around the board, leaving space so guests can access spreads and cheeses easily.

Assembly & Garnish

  1. 10

    Build the board

Start by placing cheese pieces and bowls of spreads evenly across the board to create visual anchor points. Add clusters of cured meats next to complementary cheeses. Fill in gaps with fruits, olives, pickles, nuts, and crackers. Vary heights and textures to create interest.

  2. 11

    Garnish and final touches

Tuck rosemary or thyme sprigs around clusters, sprinkle microgreens or edible flowers for color, and ensure each cheese has an appropriate knife. Keep the board balanced so no one area is overcrowded.

  3. 12

    Serve

Serve immediately after assembling (cheeses at room temperature). Replenish components as needed. Provide plates and small forks/toothpicks for easy serving.
