Brisket and Seasoning

Trim and rest
Pat the 4 lb brisket dry with paper towels. Trim excess hard fat but leave approximately 1/4" of fat to keep the meat moist during cooking.

Make dry rub
In a small bowl, combine 2 tbsp kosher salt, 1.5 tbsp coarsely ground black pepper, 2 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder, and 1 tbsp brown sugar. Mix thoroughly.

Apply rub
Rub 2 tbsp olive oil evenly over the surface of the brisket to help adherence. Generously coat the entire brisket with the dry rub, pressing it into the meat on both sides. Let the seasoned brisket rest at room temperature for 30 minutes or refrigerate up to overnight (if refrigerating, bring to room temp for 45 minutes before cooking).

Preheat oven or smoker
For oven method: preheat to 275°F (135°C). For smoker: preheat to 225–250°F (107–121°C) using mild wood like oak or apple for smoke.

Prepare cooking vessel
Place the brisket fat-side up in a large roasting pan or deep baking dish. Pour 2 cups beef broth, 2 tbsp apple cider vinegar, and 1 tbsp Worcestershire sauce into the pan around (not over) the brisket to create steam and a flavor base.

Low and slow cook
Cover the pan tightly with foil (or use a lid if roasting pan has one). Roast in the oven at 275°F (or continue smoking at 225–250°F) for approximately 4–5 hours, or until the internal temperature reaches 195–203°F (90–95°C) and the meat is fork-tender. Check liquid level every 60–90 minutes and add up to 1/2 cup additional beef broth if the pan is dry.

Baste (optional)
Every 60–90 minutes, carefully uncover and spoon some of the pan juices over the top of the brisket, then re-cover. This helps maintain moisture and develops a glossy surface for final saucing.
Resting and Slicing

Rest
When brisket reaches 195–203°F and is tender, remove the pan from the oven or smoker. Transfer brisket to a cutting board, reserving the cooking liquid. Tent brisket loosely with foil and rest for 30–45 minutes to allow juices to redistribute.

Slice
Using a sharp slicing knife, slice the brisket thinly against the grain. Identify the grain direction in both flat and point portions and adjust slicing angle so each slice is tender. Aim for 1/8"–1/4" thick slices for serving.
Finishing Sauce (lightly sauced)

Make finishing sauce
While brisket rests, combine 3 tbsp prepared barbecue sauce with 2 tbsp reserved beef drippings or strained cooking liquid in a small saucepan. Heat gently over low heat until warmed and combined, whisking in 1 tsp hot sauce if you want a touch of heat. Taste and adjust — the sauce should be lightly flavored, not overpowering.

Lightly sauce the slices
Brush a thin coat of the finishing sauce over the sliced brisket (or pass sauce on the side). The goal is a light glaze that complements but does not mask the beef flavor.
To Serve

Arrange sliced brisket on a platter or in sandwich rolls. Sprinkle 2 tbsp chopped fresh parsley over the top for color and freshness. Serve extra sauce on the side. Leftovers can be refrigerated in an airtight container up to 4 days.
