    Prep and temper eggs

    In a medium bowl, whisk the 4 egg yolks with the 1 tablespoon cornstarch and 2 tablespoons granulated sugar until smooth and slightly pale.

    Heat dairy

    Combine 2 cups whole milk and 1 cup heavy cream in a medium saucepan. Add a pinch of salt. Heat over medium until small bubbles form at the edges and steam rises, stirring occasionally—do not boil.

    Temper eggs into milk

    Slowly ladle about 1/2 cup of the hot milk mixture into the egg yolks while whisking constantly to temper. Repeat with another 1/2 cup so the eggs warm gradually.

    Cook pudding

    Pour the tempered egg mixture back into the saucepan with the remaining milk. Cook over medium-low heat, whisking constantly, until the mixture thickens and coats the back of a spoon (about 3–5 minutes). Once thickened, remove from heat.

    Finish with vanilla

    Stir in 2 teaspoons vanilla extract. Taste and adjust sweetness if needed, adding up to 1 tablespoon more sugar if desired. Let the pudding cool for 10 minutes, stirring occasionally to release steam.

Assembly

    Prepare bananas and wafers

    Peel and slice the 4 medium bananas into 1/4-inch rounds. Arrange the 12 vanilla wafers so they're ready; if large, break a few in halves to fit layers.

    Layer pudding

    In a 2-quart shallow dish or individual serving glasses, spread a thin layer (about 1 cup) of warm pudding on the bottom. Place a single layer of vanilla wafers over the pudding, followed by a layer of banana slices (use about half the bananas). Spoon another 1 to 1 1/2 cups pudding over the bananas to cover them. Repeat with remaining wafers, bananas, and pudding, finishing with a smooth pudding layer on top.

    Cool and set

    Press a piece of plastic wrap directly onto the surface of the pudding to prevent a skin from forming. Refrigerate for at least 3 hours, preferably 4–6 hours or overnight, to allow flavors to meld and wafers to soften slightly.

    Whip cream (optional)

    About 15 minutes before serving, whip 1 cup heavy cream (if not using pre-made) with 1 tablespoon powdered sugar and 1/2 teaspoon vanilla until soft peaks form. Spoon or pipe the whipped cream over the chilled pudding.

    Garnish and serve

    Garnish with a few crushed vanilla wafers on top and optional mint leaves. Serve chilled. Store leftovers covered in the refrigerator for up to 3 days.
