Method
Potatoes

Season and bake
Rub each potato all over with olive oil, then sprinkle evenly with kosher salt and black pepper. Place directly on an oven rack set over a foil-lined baking sheet (to catch drips) and bake for 45–60 minutes, until skins are crisp and a skewer or fork slides into the center with little resistance. Larger potatoes will take longer.

Keep warm
When potatoes are done, remove from oven and keep warm on a baking sheet tented with foil until ready to serve. For faster service, wrap in foil individually after a 5-minute rest.
Bacon

Preheat oven to 400°F (204°C) if not already warm. Arrange bacon slices in a single layer on a rimmed baking sheet lined with foil or parchment. Bake 15–20 minutes until crisp to your liking. Transfer to a paper towel–lined plate to drain. Once cool, chop or crumble into bite-sized pieces. Reserve for topping.

Reheat prepared chili in a saucepan over medium heat until simmering, stirring occasionally. Keep warm on low or in a small slow cooker for serving so it stays spoonable but not boiling.
Beer Cheese Sauce

Make roux
In a medium saucepan over medium heat, melt the unsalted butter. Add the flour and whisk constantly for 1–2 minutes to cook the raw flour taste without browning (you want a blond roux).

Add liquids
Slowly whisk in the beer until smooth, then whisk in the milk. Bring the mixture to a gentle simmer, whisking, until slightly thickened, about 3–5 minutes.

Finish sauce
Reduce heat to low. Whisk in the cream cheese until melted and smooth. Add the shredded sharp cheddar gradually, whisking to melt and create a smooth sauce. Stir in Dijon mustard, Worcestershire, smoked paprika, salt, and black pepper. Taste and adjust seasoning. If sauce is too thick, thin with up to 2 tablespoons milk; if too thin, simmer gently until desired consistency. Keep warm over very low heat, stirring occasionally; do not boil.
Cheese & Dairy

Keep shredded cheddar-jack refrigerated until ready to assemble. Spoon sour cream into a serving bowl and chill until service.
Fresh Toppings

Prepare toppings while potatoes bake: thinly slice green onions, dice tomatoes (remove seeds for less moisture), and dice the white onion. Place each topping in a separate bowl for the bar. Keep tomatoes chilled until service; other toppings may sit at room temperature briefly.
Assembly & Service

Set out all warm components (baked potatoes, beer cheese sauce, pulled pork, chili, crumbled bacon) and cold toppings (shredded cheddar-jack, sour cream, green onions, tomatoes, diced white onion) in separate bowls with serving spoons. For each potato, make a lengthwise slit across the top and gently squeeze the ends to open. Fluff the center with a fork.

Offer guests or assemble plates by topping each opened potato with desired combinations: a generous ladle of beer cheese, or spoonfuls of chili or pulled pork, then sprinkle shredded cheddar-jack so it melts slightly from the heat. Finish with crumbled bacon, a dollop of sour cream, diced tomatoes, diced white onion, and a sprinkle of sliced green onion.
