Prepare ingredients
Finely grate the sharp cheddar and transfer to a mixing bowl. Finely mince the yellow onion and finely chop the drained pimientos. Remove cream cheese from refrigerator and let soften at room temperature for 15–20 minutes if not already soft.

Soften cream cheese
If the cream cheese isn't soft enough to stir easily, microwave it in a microwave-safe bowl in 5–8 second bursts until pliable (do not melt).

Combine base
In a medium bowl, beat the softened cream cheese with a flexible spatula or electric hand mixer on low until smooth. Add the mayonnaise and beat until fully incorporated and smooth.

Fold in cheese and pimientos
Add the grated cheddar to the mayo-cream cheese base and gently fold to combine using a spatula. Fold in the finely chopped pimientos and minced onion until evenly distributed.

Season
Add Dijon mustard, apple cider vinegar, Worcestershire sauce, granulated sugar, smoked paprika, Cayenne pepper, kosher salt, and freshly ground black pepper. Stir thoroughly and taste. Adjust seasoning: add more salt, pepper, or cayenne to taste.

Finish and chill
Fold in chopped chives or scallions if using. Transfer pimento cheese to an airtight container, press a piece of plastic wrap directly onto the surface to prevent a skin, and chill at least 1 hour to let flavors meld. For best flavor, refrigerate 4 hours or overnight.

Serve chilled or at cool room temperature as a spread for crackers, toasted bread, sandwiches, or as a dip with crudités. Stir briefly before serving if firm from refrigeration.
