Method

Protein Choice

  1. 1

    Select and prepare meat

Choose either the sliced deli ham or roasted turkey as primary protein (6 oz). If you want extra meat or a different texture, add the optional thinly sliced smoked ham or extra turkey (2 oz). Pat slices dry with a paper towel if they feel moist—this helps them brown and not steam.

  2. 2

    Cold addition (no-warmth option)

If you prefer the meat cold (for salads, sandwiches or cold platters), stack and fold slices to fit your plate or bread. Proceed to 'For Serving' to add condiments and herbs. Total time: 1–2 minutes.

  3. 3

    Warm addition (pan-heat option)

Heat a skillet over medium heat. Add 1 tsp olive oil and 1 tbsp butter. Once butter melts and sizzles, add the ham or turkey slices in a single layer (do not overcrowd). Let cook 45–60 seconds undisturbed to develop light browning, then flip and cook another 30–45 seconds. For thicker turkey slices, cook 60–90 seconds per side until warmed through and lightly golden. Remove to a plate and tent loosely with foil to keep warm.

Warmth & Finish (optional)

  1. 4

    Season and finish

While the meat rests, sprinkle freshly ground black pepper to taste (about 1 tsp across the batch) and chopped herbs (1 tbsp). If you like a little extra gloss and flavor, spoon any remaining butter from the pan over the slices. Taste a small piece and adjust seasoning.

  2. 5

    Citrus brightening

If using, squeeze half a lemon wedge lightly over the turkey (lemon works best with turkey) or skip for ham. This brightens flavor and cuts richness.

For Serving (optional)

  1. 6

    Assemble

Spread mustard or mayonnaise (about 2 tsp) on bread, a roll, or a salad as desired. Arrange warm or cold ham/turkey on the prepared base, garnish with herbs, and serve immediately.

  2. 7

Storage note: Refrigerate any leftovers in an airtight container for up to 3–4 days. Reheat gently in a skillet over low heat or in a microwave in 20–30 second intervals until just warm.
