Method

Prepare sandwich components

    Toast bread

    Lightly toast the two slices of rye bread until just golden. This prevents sogginess and gives structure to the sandwich.

    Mix condiments

    In a small bowl, combine the Dijon mustard and mayonnaise until smooth. Spread the mixture evenly on one side of each toasted rye slice.

Assemble and heat

    Layer pastrami and cheese

    Place one slice of Swiss cheese on the mustard-coated side of the bottom slice of bread. Pile the thinly sliced pastrami evenly on top of the cheese, arranging it so the meat slightly overhangs but stays on the bread. Top the pastrami with the second slice of Swiss cheese if you prefer extra melt (optional).

    Grill sandwich

    Heat a skillet or griddle over medium heat. Add 1 tablespoon unsalted butter and let it melt and foam. Place the assembled sandwich, mustard/mayo sides inside, onto the skillet. Press gently with a spatula or a second pan. Cook 2–3 minutes until the bottom is golden brown. Flip the sandwich and cook another 2–3 minutes, pressing gently, until the cheese melts and the other side is golden. If cheese needs extra melting, cover the skillet for 30–60 seconds after flipping.

Finish and serve

    Remove the sandwich from the skillet and transfer to a cutting board. Let rest 1 minute, then slice the sandwich in half on the diagonal. Serve immediately with a dill pickle spear and 1/2 cup cole slaw on the side, if desired.
