Prepare lobster meat
If using whole cooked lobster, pick meat from tail, claws and knuckles and cut into 1/2–1-inch pieces. If using pre-picked, lightly pat dry with paper towel to remove excess moisture. Measure about 8 ounces.

In a medium bowl combine 3 tablespoons mayonnaise, 1 tablespoon fresh lemon juice, 1/2 teaspoon Dijon mustard and a 1/4 teaspoon pinch of cayenne (if using). Stir until smooth.

Add 2 tablespoons finely chopped celery, 1 tablespoon chopped chives, and 1 teaspoon chopped tarragon or parsley to the bowl. Mix to combine.

Gently fold the lobster pieces into the dressing until evenly coated. Use a light hand to keep chunks intact.

Season with 1 teaspoon salt and 1/2 teaspoon freshly ground black pepper. Taste and adjust: add more lemon juice or salt if needed. Chill briefly (10–15 minutes) if you prefer a colder filling, but do not over-chill or the mayonnaise will firm up too much.

Butter the outside cut sides of the split-top roll with 1 tablespoon unsalted butter. Optionally spread 1/2 tablespoon soft butter inside the roll for extra richness.

Fill the toasted roll with the lobster salad, piling it gently but generously so the chunks stay visible. Use all of the prepared lobster filling for a single hearty sandwich (adjust if you prefer lighter portion).
