Chill jar and serving spoon
Place the caviar jar (if unopened) and serving bowl or small dish in the refrigerator for at least 30 minutes. If you have a glass or mother-of-pearl serving spoon, chill it briefly in the iced water to keep temperature consistent; do not use metal spoons, which can alter flavor.

Fill a small shallow bowl with the iced water and set beside your work area. This is to rest the spoon intermittently and keep the caviar cold while serving.

If using blini: warm them briefly (10–15 seconds) in a low toaster oven or microwave (5–8 seconds) just until slightly warm — do not overheat. Spread about 1/2 teaspoon of softened unsalted butter on each blini or cracker just before assembling to create a neutral, slightly rich base.

In a small bowl mix the crème fraîche, finely chopped shallot, chives, lemon juice, and a pinch (about 1/8 tsp) of black pepper. Taste and adjust: the crème fraîche should be tangy but not overpowering; set covered in refrigerator until ready to serve.

Open the caviar jar carefully: wipe the rim and inner lid with a cold, clean towel. If there is a membrane or film on top of the roe, remove gently with a spoon and discard. Avoid prolonged exposure to warm air.

Using the chilled mother-of-pearl or plastic spoon, take small portions of caviar (about 1/2 to 1 tablespoon per serving). Place the caviar on top of the buttered blini or cracker, or in small individual tasting spoons or dishes. Keep portions small to preserve texture and temperature.

Between servings, keep the caviar jar on a bed of crushed ice or return to the refrigerator. Do not leave caviar at room temperature for more than 20 minutes at a time to preserve quality and food safety.

After serving, reseal the jar tightly and store it upright in the coldest part of the refrigerator (not the door). Consume within 48 hours of opening for best quality; unopened, follow producer's use-by guidelines.
