This creates a thin, velvety base that complements the brine and helps the caviar sit neatly. This step is optional but recommended for a richer mouthfeel.

If using crème fraîche and shallot, place a very small dot (about 1/4 tsp crème fraîche) on each oyster and top with a scant pinch of minced shallot. This adds acidity and texture; keep applications light to avoid overwhelming the oyster or caviar.
