In a bowl, mix together soy sauce, lime juice, and minced garlic. Add the beef tenderloin and ensure it is well coated. Cover and refrigerate for at least 1 hour or up to overnight.

Prepare the rice noodles according to package instructions. Drain and set aside.

Grill the Steak

Preheat a grill or grill pan over medium-high heat. Remove the steak from the marinade and grill for about 4-5 minutes per side, or until desired doneness. Let it rest for 5 minutes before slicing.

In a large bowl, combine shredded cabbage, grape tomatoes, chopped mint, chopped peanuts, and the cooked rice noodles. Toss gently to combine.
