    Prepare the Chicken

    Rinse the chicken legs under cold water and pat them dry. Season with salt and black pepper, then rub olive oil all over the chicken.

    Smoke the Chicken

    Preheat your smoker to 225°F (107°C). Soak applewood chips in water for 30 minutes, then drain. Place the soaked chips in the smoker and arrange the chicken legs on the grill grate. Smoke for about 2 hours, or until the internal temperature reaches 165°F (74°C).

    Prepare the Slaw

    In a large bowl, combine shredded apples and celery. Toss with a dressing made from honey, lemon juice, and a pinch of salt.

    Serve

    Plate the smoked chicken legs and top with crumbled Asher Blue Cheese. Drizzle with ghost pepper sauce and serve alongside the apple and celery slaw.
