Prepare the Potatoes
Preheat the oven to 425°F (220°C). Wash the fingerling potatoes and cut them in half lengthwise. Toss with olive oil, salt, and pepper. Spread them on a baking sheet.

Roast the Potatoes
Roast the fingerling potatoes in the oven for 15 minutes.

Add Salmon and Asparagus to the Oven
After 15 minutes, add the salmon and asparagus to the baking sheet with the potatoes. Roast for an additional 12-15 minutes, or until the salmon is cooked through and the asparagus is tender.

Make the Sauce Gribiche
While the salmon and vegetables are roasting, prepare the sauce. Chop the hard-boiled eggs and combine in a bowl with Dijon mustard, red wine vinegar, olive oil, capers, parsley, salt, and pepper. Mix well.

Serve
Once the salmon, potatoes, and asparagus are cooked, serve them on a plate. Drizzle the Sauce Gribiche over the salmon and garnish with pea tendrils.
