    Prepare the Farro

    In a saucepan, cook farro according to package instructions. Typically, this takes about 20-25 minutes.

    Roast the Carrots

    Preheat the oven to 400°F (200°C). Peel and chop carrots, toss with olive oil, salt, and pepper. Roast in the oven for about 20-25 minutes until tender.

    Blister the Cauliflower

    Cut the cauliflower into florets. In a skillet over medium-high heat, add olive oil and cauliflower. Cook until it’s blistered and tender, about 10-12 minutes.

    Grill the Lamb

    Season the lamb porterhouses with olive oil, salt, and black pepper. Preheat the grill to medium-high. Grill the lamb for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Make the Mint Salsa Verde

    In a blender, combine fresh mint, lemon juice, garlic, olive oil, salt, and pepper. Blend until smooth.

    On a plate, layer farro, arugula, blistered cauliflower, and roasted carrots. Top with grilled lamb and drizzle with mint salsa verde.
