    Prepare the Wisco Sauce

    In a small bowl, mix together mayonnaise, ketchup, Dijon mustard, pickle juice, garlic powder, smoked paprika, and black pepper. Set aside.

    Cook the Onions

    Slice the yellow onion thinly. In a skillet over medium heat, add a bit of oil and sauté the onions until they are caramelized and golden brown, about 10-15 minutes. Remove from heat and set aside.

    Form the Patties

    Divide the ground beef into two equal portions and form them into balls. Do not overwork the meat.

    Smash the Burgers

    Preheat a griddle or skillet over high heat. Place the beef balls on the hot surface. Using a spatula, smash each ball down to form a patty and cook for about 2-3 minutes until a crust forms. Flip the patties.

    Add Cheese

    Immediately place two slices of American cheese on each patty after flipping. Allow to melt while cooking for another 2-3 minutes.

    Assemble the Burger

    Spread the Wisco sauce on the bottom half of the burger buns. Place the cheese-topped patties on top, followed by the sautéed onions and pickles. Top with the other half of the bun.
