Prepare rosemary and glass
Lightly clap one rosemary sprig between your hands to release oils and rim the serving glass by running the sprig around the glass lip. Place the glass in the freezer to chill while you build the drink.
Muddle rosemary
In a cocktail shaker, place the second rosemary sprig. Gently muddle it 4–6 times to release aromatic oils — do not pulverize into bits; you want fragrant oil, not large leaves.
Combine ingredients
Add gin (or vodka), fresh lemon juice, simple syrup, and the optional egg white into the shaker with the muddled rosemary.
Dry shake (if using egg white)
If using egg white, dry shake (no ice) vigorously for 15–20 seconds to emulsify and create foam.
Shake with ice
Add ice to the shaker (about 6 cubes) and shake hard for 12–15 seconds until the shaker feels cold and the outside is frosty.
Double strain and serve
Double-strain the cocktail into the chilled glass using both the cocktail strainer and a fine mesh strainer to remove rosemary bits and ice shards. For a short cocktail, pour straight into a chilled coupe or rocks glass over one large ice cube if desired.
Optional long version
If you prefer a longer, lighter drink, pour the shaken cocktail into an ice-filled highball glass and top with about 1.5 oz club soda. Stir gently once to combine.
