Chill
Chill a large wine glass (or an aperitif glass) in the freezer for 5–10 minutes or fill it with ice to cool while you prepare ingredients.
Roll the lime on the counter with the palm of your hand to release juices, then cut it in half. Reserve one half for squeezing and slice the other half into a thin wheel or half-moon for garnish if desired.
Build the Cocktail
Add the ice cubes to the chilled glass, filling it about three-quarters full.
Tear or gently clap the mint leaves between your hands once to release aroma, then add the leaves to the glass. Do not muddle aggressively — a gentle bruise is all that’s needed to release fragrance without bitterness.
Pour the elderflower liqueur over the ice and mint.
Slowly add the prosecco to the glass. Pour gently to preserve bubbles and avoid overflow.
Top with soda water to taste (about 1 oz) and give the drink one gentle stir with a bar spoon to combine ingredients without flattening the sparkling wine.
Taste and adjust: add a splash more soda if you prefer a lighter drink, or a touch more elderflower liqueur (0.25–0.5 oz) for extra floral sweetness.
Garnish & Serve
Garnish with the reserved lime wheel (or half-moon) on the rim and a small sprig of mint tucked into the drink. Clap the top mint sprig gently and place it facing the drinker for aroma.
Serve immediately while the prosecco is still effervescent.
