Method
For the cocktail
Chill glass
Place a coupe or chilled cocktail glass in the freezer for a few minutes or fill it with ice water while you prepare the drink to ensure the glass is cold.
Measure and add ingredients
Add 2 oz gin, 0.75 oz freshly squeezed lime juice, and 0.75 oz simple syrup into a cocktail shaker.
Add ice and shake
Fill the shaker with ice (about 6 medium cubes), secure the lid, and shake vigorously for 10–15 seconds until the outside of the shaker is frosty and well chilled. This both chills and dilutes the drink to the proper balance.
Fine strain
Discard ice or water from the chilled glass. Double-strain the cocktail into the chilled coupe or martini glass using both the shaker strainer and a fine-mesh strainer (or a Hawthorne strainer only if fine strainer isn't available) to remove ice shards and pulp for a silky texture.
Garnish and serve
Garnish with a lime wheel rested on the rim or a lime twist expressed over the glass, then serve immediately.
For garnish (optional)
If using a lime twist, use a peeler or small knife to cut a 1/2-inch strip of zest from a fresh lime, twist it over the drink to release oils, and drop or rest it on the rim. If using a wheel, cut a 1/4-inch slice and place on the rim.
