Prepare glass

Chill a Collins or highball glass by filling it with ice and setting aside. If you prefer a colder drink, place the glass in the freezer for a few minutes.

Build and shake

Discard the ice from the chilled glass. In a cocktail shaker add 2 oz aged rum, 0.75 oz orgeat syrup, 0.75 oz fresh lemon juice, and 0.25 oz simple syrup (use only if you prefer the drink slightly sweeter). Fill the shaker about two-thirds with ice.

Shake

Shake vigorously for 10–12 seconds until the shaker is cold and well-chilled (this also helps slightly dilute and aerate the drink).

Prepare glass with crushed ice

Fill the chilled glass about three-quarters full with crushed ice, leaving room for soda and a small crown of ice for garnish.

Strain and top

Double-strain the shaken mix over the crushed ice using a hawthorne strainer and a fine mesh strainer (to keep out pulp). Top with ~2 oz cold club soda poured gently down a bar spoon to maintain effervescence.

Finish and garnish

If using, add 2 dashes Angostura bitters over the top to add aromatic depth. Garnish with a lemon wheel or twist and sprinkle toasted almond slivers on top or on the lemon for texture and visual contrast.

Serve

Serve immediately with a straw. Encourage guests to stir lightly as they sip to integrate the soda with the orgeat as the ice melts.
