Cocktail

Method

Rim (optional)

1

If rimming the glass, combine granulated sugar and ground cinnamon on a small plate and mix well.

2

Rub the lemon wedge around the rim of a chilled coupe or rocks glass to moisten it, then dip the rim into the cinnamon-sugar mixture to coat. Set the glass aside.

Cocktail

3

Build and chill

Fill a cocktail shaker about two-thirds full with ice.

4

Add dark rum, cinnamon liqueur, fresh lemon juice, maple syrup, and Angostura bitters to the shaker. If you prefer a lighter, fruitier drink, add the optional apple cider as well.

5

Shake vigorously for 12–15 seconds, until the shaker feels very cold and slightly frosty.

6

Strain the cocktail into the prepared chilled glass. For a neat presentation use a fine strainer to remove shards of ice and any pulp.

7

Garnish with a lemon twist and a cinnamon stick. Optionally, express the lemon twist over the drink (twist skin down to spray oils over the surface) before dropping it in.

8

Serve immediately. Sip slowly to appreciate the warm cinnamon notes balanced by citrus and maple sweetness.
