Chill glass

Place a coupe or Nick & Nora glass in the freezer or fill it with ice water while you prepare the cocktail to chill it.

Measure and add spirits

Add 1.5 oz Cocchi Rosa and 1 oz gin into a cocktail shaker.

Add citrus, sweetener, and bitters

Add 0.5 oz fresh lemon juice, 0.25 oz simple syrup, and 2 dashes of orange bitters to the shaker.

Add ice and shake

Fill the shaker with ice (about 1 cup) and shake vigorously for 12–15 seconds until the shaker is very cold to the touch and the mixture is well chilled and diluted.

Prepare glass

If you chilled the glass with ice water, discard the ice/water and dry the glass briefly.

Double strain and serve

Double-strain the cocktail into the chilled coupe or Nick & Nora glass using a Hawthorne and fine mesh strainer to remove small ice chips and citrus pulp for a silky texture.

Garnish

Express the oils of a lemon twist over the drink by holding the twist over the glass and giving it a quick squeeze so oils spray onto the surface, then rim the glass with the peel and drop it in (or place on the rim) as garnish.

Serve

Serve immediately. The Capri is best enjoyed chilled and freshly made.
