Chill glass

Place a coupe or flute in the freezer for 5–10 minutes, or fill it with ice water while you prepare the cocktail to ensure the drink stays bright and cold.

Combine vermouth and bitters

In a mixing glass or small pitcher, add the dry vermouth, orange bitters, and simple syrup (if using). Add a handful of ice (about 1 cup) and stir gently for 10–15 seconds to chill and slightly dilute the vermouth.

Strain

Discard ice or water from the chilled glass. Strain the chilled vermouth mixture into the chilled coupe or flute, leaving about 1/4 inch of headroom for the Prosecco.

Top with Prosecco

Slowly top with 4 oz chilled Prosecco. Pour gently down the side of the glass to preserve bubbles and avoid foaming over.

Garnish and finish

Express the orange peel over the drink by holding it skin-side down and giving it a sharp twist to release oils, then rub the rim with the peel and drop it into the glass as garnish.

Serve

Serve immediately while the Prosecco is vibrant and bubbly.
