Marinated Amalfi-Style Lemon Salad
Prep lemons and onion
Wash the lemons well to remove any wax. Using a sharp chef's knife or mandoline, slice each halved lemon into very thin half-moons (about 1–2 mm thick). Remove and discard seeds as you slice. Place the lemon slices in a mixing bowl. Thinly slice the red onion into delicate half-rings; if you prefer milder onion, soak the slices in cold water for 5 minutes and drain well before adding.
Make the marinade
In a small bowl or measuring cup whisk together the extra-virgin olive oil, fresh thyme leaves, crushed red pepper flakes, sea salt, and freshly ground black pepper until combined.
Combine and macerate
Pour the marinade over the lemon and red onion slices. Add the rinsed capers if using. Toss gently with a spatula or your hands (wear gloves if you want to avoid lemon oil on skin) until all slices are evenly coated. Cover the bowl and let the mixture sit at room temperature for 20–30 minutes to macerate; this softens the rinds and mellows bitterness while letting flavors meld. For a deeper-flavored result, refrigerate and marinate up to 2 hours, bringing back to room temperature 10 minutes before serving.
Finish with Pecorino and garnish
Just before serving, sprinkle the grated Pecorino Romano over the marinated lemon and onion mixture and toss lightly to distribute. Taste and adjust seasoning with additional salt or pepper if needed. Scatter chopped flat-leaf parsley on top for color and texture. If you like a touch more heat, add a light pinch more red pepper flakes.
Serve
Serve the Amalfi-style lemon salad as a bright side dish or accompaniment to grilled fish, roasted vegetables, or tossed with warm pasta. This recipe yields about 4 small side-dish servings. Leftovers keep refrigerated in an airtight container for up to 2 days; flavors will intensify.
