Prepare the Beets
Wash the beets thoroughly under running water. Trim the tops and roots, then place them in a pot.
Cook the Beets
Add 4 cups of water to the pot with the beets. Bring to a boil, then reduce the heat and simmer for about 30-40 minutes, or until the beets are tender.
Make the Sweet Tea Mixture
In a separate saucepan, combine 1 cup of brown sugar with 2 cups of water. Bring to a boil, stirring until the sugar is dissolved. Remove from heat, add the tea bags, and steep for 10 minutes. Remove the tea bags and stir in the lemon juice, salt, and black pepper.
Combine and Serve
Once the beets are cooked, drain them and let them cool slightly. Peel the beets and cut them into bite-sized pieces. In a large bowl, combine the beets with the sweet tea mixture. Toss gently to coat. Serve warm, garnished with fresh parsley.
