1. Cook the Spaghetti
In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Drain and set aside.
2. Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add sliced mushrooms and cook until they are golden brown.
3. Add Other Ingredients
Stir in the roasted spaghetti squash, cherry tomatoes, and spinach. Cook until the spinach is wilted and the tomatoes are slightly softened.
4. Combine with Spaghetti
Add the cooked spaghetti to the skillet and toss everything together. Season with salt, black pepper, and chili flakes to taste.
5. Finish with Herbs
Remove from heat and stir in fresh basil and pine nuts. Serve immediately, garnished with additional basil if desired.
