Method
Prep & Rimming (optional)
- 1
Prepare rim
If rimming, pour the sea salt and toasted coconut blend onto a shallow plate. Run the lime wedge around the outside lip of a rocks or highball glass, then dip the rim into the mixture to coat. Set the glass aside.
Build the Cocktail
- 2
Combine base ingredients
In a cocktail shaker, add the reposado tequila (2 oz), fresh pineapple juice (2 oz), fresh lime juice (0.75 oz) and agave syrup (0.5 oz). Add the damiana tincture (0.25 tsp). Fill the shaker about two-thirds with ice.
- 3
Shake
Shake vigorously for 10–12 seconds until the shaker is chilled and slightly frosted. This chills and lightly dilutes the pineapple-margarita base while integrating the damiana.
- 4
- 5
Add rum and ginger beer
Float or gently pour the dark rum (1 oz) over the back of a spoon onto the drink to give a layered flash of dark rum. Top with chilled ginger beer (3 oz). Stir gently once or twice to marry the flavors while preserving some effervescence.
Garnish & Serve
- 6
Garnish with a pineapple wedge and a lime wheel on the rim. Add a piece of candied ginger or a small pineapple frond for aroma. Serve immediately with a short stirring straw.
