Cocktail

Method

Cocktail

  1. 1

    Prepare

If using fresh pineapple chunks, cut about 1–2 small cubes (≈1 oz) and chill. If you prefer the drink colder and slightly slushy, freeze the chunks for 30–60 minutes before mixing.

  2. 2

    Combine ingredients

In a cocktail shaker or blender add 2 fl oz vodka, 0.5 fl oz cachaça, 1 fl oz cream of coconut, 0.5 fl oz coconut cream (optional for extra richness), 2 fl oz pineapple juice, 0.25 fl oz fresh lime juice (optional), the pineapple chunks, and about 4 fl oz cubed ice.

  3. 3

    Shake or blend

If using a shaker: Secure the lid and shake vigorously for 15–20 seconds until well chilled and slightly frothy. If using a blender: Blend on high for 6–10 seconds until smooth and lightly aerated. Adjust texture by adding a little more ice (for thicker) or a splash more pineapple juice (for thinner).

  4. 4

    Strain and serve

Double-strain into a chilled coupe or large cocktail glass (or serve in a tiki glass) over fresh ice if desired. If a very smooth, pulp-free drink is preferred, fine strain through a mesh sieve.

  5. 5

    Garnish and finish

Grate a small amount of fresh nutmeg directly over the top (start with a light dusting — about a pinch). Garnish with a pineapple wedge or leaf on the rim. Serve immediately.

  6. 6

Taste and adjust: if the cocktail is too sweet, add a small splash more fresh lime juice and briefly shake again; if too strong, add a bit more pineapple juice or cream of coconut to balance.
