Prepare the Nut Filling

In a bowl, mix together the chopped walnuts, chopped almonds, sugar, and cinnamon. Set aside.

Prepare the Phyllo Pastry

Preheat the oven to 350°F (175°C). Melt the butter in a saucepan. Lay out one sheet of phyllo pastry in a greased 9x13 inch baking dish and brush with melted butter. Repeat with 7 more sheets.

Layer the Filling

Spread a thin layer of the nut mixture over the phyllo layer. Cover with two more sheets of phyllo, brushing each with butter. Repeat the process, layering the nuts and phyllo until all the nuts are used, finishing with a top layer of 8 sheets of buttered phyllo.

Cut the Baklava

Using a sharp knife, cut the baklava into diamond or square shapes.

Bake

Bake in the preheated oven for about 45-50 minutes, until golden brown and crisp.

Prepare the Syrup

While the baklava is baking, combine honey, water, and vanilla extract in a saucepan. Bring to a boil, then reduce heat and simmer for about 10 minutes.

Add Syrup to Baklava

Once the baklava is finished baking, remove it from the oven and immediately pour the syrup over it. Allow it to cool completely before serving.
