Sushi Rice & Seasoning
Rinse and soak rice
Place the 4 cups of short-grain sushi rice in a fine-mesh sieve and rinse under cold water, stirring with your hand, until the water runs almost clear (3–5 minutes). Drain and transfer rice to a rice cooker or heavy pot. Add 4.5 cups of water. Let rice soak 30 minutes if you have time (helps texture).
Cook rice
If using a rice cooker, cook according to machine instructions. If using a pot, bring rice and water to a boil over medium-high heat, then reduce to low, cover, and simmer 12–15 minutes until water is absorbed. Remove from heat and let rest, covered, 10 minutes.
Prepare sushi vinegar
While rice cooks, combine 1 cup rice vinegar, 6 tbs sugar and 2 tsp salt in a small saucepan. Warm gently over low heat, stirring, until sugar and salt dissolve; do not boil. Cool slightly.
Season rice
Transfer cooked rice to a large wooden or heatproof nonreactive bowl. Pour seasoned vinegar evenly over rice. Using a rice paddle or spatula, fold and cut through the rice to distribute the vinegar while fanning the rice to cool quickly to body temperature (this gives glossy, separate grains). Cover with a damp towel and keep at room temperature until assembling (do not refrigerate).

Keep sushi-grade salmon and tuna chilled until ready. Using a very sharp knife, slice salmon and tuna into 1/4-inch thick sashimi slices for nigiri or thin strips for rolls. If serving shrimp nigiri, butterfly cooked shrimp and chill. Shred imitation crab and toss lightly with a small amount of spicy mayo if making California-style rolls. Thinly slice avocados and cucumbers just before assembly to prevent browning.
Toast sesame seeds and cut garnishes
In a dry skillet over medium heat, toast white and black sesame seeds for 1–2 minutes until fragrant; cool. Thinly slice green onions and prepare microgreens/shiso. Cut nori sheets into strips if making hand rolls or decorations.

Assemble sauces
Pour soy sauce and ponzu into shallow dipping bowls. Stir sriracha into spicy mayo if you want a kick (up to 2 tsp). Place eel sauce in a small bowl for drizzling. Keep condiments accessible on the serving table.
Assemble Rolls, Nigiri & Platters
Prepare work station
Lay out bamboo mats covered with plastic wrap, a bowl of water with a splash of rice vinegar (to wet hands), a cutting board and your sharp knife. Have platters ready.
Make classic maki rolls (California-style & simple fish rolls)
Place a nori sheet shiny-side down on the mat. Wet your hands and take about 3/4 cup of seasoned rice; spread evenly over the nori leaving a 1-inch strip at the top. Add fillings (e.g., shredded crab + avocado + cucumber or tuna strips + green onion) in a line across the rice near the bottom. Use the mat to roll firmly away from you, pressing into a tight cylinder. Seal edge with a little water. Repeat to make 8–10 rolls. Slice each roll into 6–8 pieces with a very sharp, dampened knife (wipe blade between cuts).
Make uramaki (inside-out) rolls
For inside-out rolls, place plastic wrap on mat, nori on the plastic, spread rice on the nori, flip nori so rice faces down on the plastic, add fillings on the nori side, and roll. Sprinkle toasted sesame or furikake on the rice before flipping for visual appeal. Slice as above.
Make nigiri
Wet hands. Take about 2 tablespoons (approx. 20–25 g) of rice and form an oblong ball with a gentle squeeze. Brush a thin line of wasabi on one side of fish slice (optional) and press fish onto rice with the wasabi side down to make nigiri. Arrange shrimp nigiri similarly (butterflied shrimp over rice).
Assemble sashimi and platters
Arrange sashimi slices (salmon and tuna) in overlapping rows on platters. Place nigiri pieces neatly in rows. Add maki and uramaki slices on separate platters. Add small bowls of soy, ponzu, spicy mayo and eel sauce. Garnish with pickled ginger, lemon wedges, microgreens, toasted nori strips and extra sesame seeds. Leave wasabi paste in a small dish for guests to use.
Finishing & Serving
Final touches and safety
Keep raw fish chilled until the last minute; place platters on ice-lined trays if not serving immediately. Label platters (e.g., raw salmon, cooked shrimp, vegetarian) so guests with dietary restrictions know what they are eating.
Serve
Arrange platters on the table with small plates, chopsticks, dipping bowls and napkins. Replenish condiments as needed. Sushi is best eaten within 1–2 hours of assembly for optimal texture and safety.
