Method
Classic Iced Lemonade
Make simple syrup
Combine 1 cup water and 3 tablespoons granulated sugar in a small saucepan. Heat over medium, stirring until sugar dissolves. Bring just to a simmer, then remove from heat and cool to room temperature (about 10–15 minutes).
Mix lemonade
In a pitcher, combine 1 cup fresh lemon juice and the cooled simple syrup. Add 3 cups cold water and stir. Taste and adjust: add more water if too strong or a bit more syrup if too tart.
Cucumber-Mint Sparkling Cooler (Non-alcoholic)
Prepare cucumber-mint base
In a small blender or food processor, combine 1/2 cup peeled & chopped seedless cucumber, 12 mint leaves, 2 teaspoons simple syrup, and 2 tablespoons fresh lime juice. Pulse until smooth, then strain through a fine mesh sieve into a bowl to remove solids (press with the back of a spoon).
Assemble drinks
Divide the cucumber-mint concentrate among two glasses over 1/2 cup ice each. Top each glass with 1 cup sparkling water. Stir gently to combine. Taste and add more simple syrup if needed.
Iced Cold Brew Coffee (make-ahead)
Steep cold brew
In a large jar or pitcher, combine 1 cup coarsely ground coffee with 4 cups cold water. Stir to saturate grounds, cover, and steep at room temperature or in the refrigerator for 12–18 hours.
Strain
After steeping, strain the coffee through a fine mesh sieve lined with a coffee filter or cheesecloth into a clean container. Press gently to extract liquid but avoid forcing fines through. This yields concentrated cold brew.
Dilute and sweeten
To serve, fill glasses with ice (about 1 cup each). Pour cold brew concentrate to about 2/3 of the glass and top with water or milk to taste (use the 1 cup milk for two to three servings). Stir in simple syrup or sweetener (about 2 tablespoons total, adjust to preference).
Store
Keep leftover cold brew refrigerated in a sealed container up to 1 week. Stir or dilute before serving if it separates.
