Pancake (Orh Luak) Batter & Egg Mixture

    Prepare batter

    In a medium bowl whisk together rice flour, tapioca starch and cornstarch. Gradually whisk in 1 1/4 cups water until smooth and free of lumps. Let batter rest 10 minutes.

    After resting, season the batter with 1/2 tsp salt and 1/4 tsp white pepper. If batter thickened, add up to 1-2 tbsp water to restore pancake-pouring consistency (should be slightly runny but viscous).

    Beat eggs in a small bowl and set aside separately. Eggs will be poured onto pancake later to create the characteristic egg layer.

Oyster Filling & Mix-ins

    Prepare oysters: drain any excess liquid and pat gently with paper towel to remove surface moisture (this helps get a crisp edge). Keep oysters whole or halved depending on size.

    Toss bean sprouts with a pinch of salt and set aside. Combine shallot, minced garlic, 1/2 tsp light soy sauce, 1/2 tsp sesame oil, 1/8 tsp white pepper and 1/8 tsp salt in a small bowl to make a quick seasoning for the oysters and sprouts.

    Combine the seasoned mixture with the oysters and set near the stove for quick assembly.

Cooking and Crisping

    Heat pan

    Use a heavy nonstick or well-seasoned cast-iron skillet (10-12 inch). Place skillet over medium-high heat until hot. Add 1 tablespoon lard or vegetable oil and swirl to coat.

    Pour 1/3 to 1/2 cup batter into the center of the pan and immediately tilt/rotate pan to spread a thin round pancake about 7-8 inches across. Batter should be thin enough to spread but still fairly opaque.

    Let pancake cook for about 30–45 seconds until edges begin to set. Reduce heat to medium. Pour half of the beaten eggs evenly over the pancake, using a spatula to spread the egg into a thin layer that covers most of the surface.

    Scatter half the oyster mixture (about 6 oysters), half the bean sprouts, and half the Chinese chives evenly over the egg-topped pancake. Let cook undisturbed 45–60 seconds until egg is mostly set and underside of pancake is golden.

    To encourage a lacy crispy edge, tilt the pan slightly and add 1 tablespoon of extra oil around the edges of the pancake so oil runs under the pancake edge; this will fry the batter and create the signature crispy fringe. Cook another 20–30 seconds until bottom is deeply golden and edges crisp.

    Using a thin metal spatula, carefully loosen the edges and fold the pancake in half or fold in thirds (traditional is half-moon), pressing gently so filling is enclosed. Slide onto a plate, leaving any excess crisp lace visible. Repeat the process for the second pancake (use remaining batter, egg, oysters, sprouts, chives).

    If you prefer extra crunchy lace, after sliding the pancake onto the plate, spoon a teaspoon of hot oil from the pan onto exposed edges to further crisp them.

Finishing & Serving

    Mix chili sauce and vinegar to taste in a small bowl to make a dipping sauce. Adjust heat/sour balance as desired.

    Sprinkle fried shallots over the pancakes if using, and serve with lime wedges on the side. Cut each folded pancake into 2-3 pieces and serve hot so the contrast of crisp lace and soft interior is preserved.

    Leftovers can be gently reheated in a skillet over low heat to restore some crispness but are best eaten immediately.
