Pistachio Syrup

Toast pistachios
Preheat a dry skillet over medium heat. Add the shelled pistachios and toast, stirring frequently, 4–6 minutes until fragrant and lightly browned. Remove from heat and let cool 5 minutes.

Blend
Place the toasted pistachios in a food processor or high-speed blender. Add 2 tablespoons of the water and pulse/blend until a coarse paste forms, about 30–45 seconds. Scrape down the sides as needed.

Make syrup
In a small saucepan combine granulated sugar, remaining water (about 6 tablespoons), and light corn syrup. Bring to a gentle simmer over medium heat, stirring until sugar dissolves, about 2–3 minutes.

Combine and simmer
Whisk the pistachio paste into the simmering sugar syrup. Reduce heat to low and simmer gently for 3–4 minutes, stirring to incorporate and extract flavor. Do not boil vigorously.

Strain and finish
Remove from heat and let cool 5 minutes. Stir in vanilla extract and salt. Strain the syrup through a fine-mesh sieve or cheesecloth into a bowl, pressing on solids to extract liquid. Discard solids (or save for baking). Refrigerate the syrup in a sealed jar — it will keep 1–2 weeks.

Chill espresso
If you haven't already, brew 2 oz of espresso (or 2 oz very strong coffee). Allow it to cool to room temperature or chill briefly in the fridge so it doesn't melt the ice excessively.

Combine ingredients
In a blender add cooled espresso, whole milk, 3 tablespoons pistachio syrup (adjust to taste), optional 1/2 tsp pistachio paste for extra depth, and 1.5 cups ice.

Blend to frappe
Blend on high until smooth and slushy, about 20–40 seconds depending on blender strength. Check texture — if too thin, add a few more ice cubes and pulse; if too thick, add up to 1–2 tablespoons milk.

Serve
Pour the frappe into a 16-ounce glass leaving space for topping. Top with about 1/4 cup whipped cream, then sprinkle chopped roasted pistachios over the cream for garnish.

Adjust and enjoy
Taste and adjust sweetness by adding more pistachio syrup if desired (start with 1/2 tbsp increments). Serve immediately with a straw.
