Marinades & Brines

Fish (6 varieties) - approximately 6–8 oz portions each

Method

Brine Preparation (for firmer texture, optional)

    Make brine

    In a large bowl, dissolve 1/2 cup coarse sea salt and 1/4 cup sugar into 4 cups cold water. Stir until fully dissolved.

    Submerge firm fillets (cod, snapper, mackerel, trout) in the brine for 15–20 minutes in the refrigerator. Do not brine salmon or oily fish for more than 10 minutes. Remove fish, rinse briefly under cold water, and pat dry with paper towels.

Marinades (create three distinct marinades to offer variety)

    Mediterranean Citrus-Herb Marinade (for snapper, trout)

    In a bowl combine 1/4 cup olive oil, 1/4 cup fresh lemon juice, 2 tbs minced garlic, 1/4 cup chopped fresh dill, 1/4 cup chopped parsley, 2 tbs capers, 1 tsp coarse black pepper and pinch of sea salt. Toss snapper and trout pieces in the marinade and refrigerate for 20–30 minutes.

    Smoky Honey-Soy Marinade (for mahi-mahi, cod)

    Whisk together 1/4 cup soy sauce, 2 tbs honey, 1 tbs olive oil, 1 tsp smoked paprika, 1 tbs grated ginger and 1 tbs minced garlic. Marinate mahi-mahi and cod for 15–25 minutes in the fridge (do not exceed 30 minutes for delicate white fish).

    Spicy Citrus Marinade (for salmon, mackerel)

    Mix 1/4 cup olive oil, 2 tbs fresh lemon juice, 1 tbs chili-lime seasoning, 1 tbs minced garlic, 1 tsp chili flakes and 1/4 cup chopped cilantro. Brush onto salmon and mackerel and let rest 15–20 minutes in the refrigerator; oily fish absorb flavors faster.

Prepare Grill & Finishing Butter

    Preheat grill to medium-high (about 400–450°F / 200–230°C). Clean and oil grates well to prevent sticking.

    In a small saucepan, melt 1/2 cup unsalted butter with 2 tbs chopped parsley and 1 tbs lemon juice until combined. Keep warm for basting and finishing.

Grilling (cook each variety to ideal doneness)

    General grilling notes

    All fillets should be at room temperature before hitting the grill (about 10 minutes). Brush grates and fish with oil. Cook skin-side down first for skin-on pieces to get crispy skin and prevent tearing.

    Salmon (skin-on)

    Place salmon skin-side down on the hot grill. Cook 4–6 minutes without moving, then flip and cook 1–3 minutes more until internal temperature reaches 125–130°F (52–54°C) for medium. Baste with butter before serving and finish with lemon wheel.

    Cod (thicker fillets)

    Use a fish basket or foil if fillets are fragile. Grill 4–6 minutes per side depending on thickness until opaque and flakey (internal temp 135–140°F / 57–60°C). Baste with the melted herb butter and a squeeze of lemon before plating.

    Mahi-mahi / Swordfish (steaks)

    Grill steaks 4–6 minutes per side until firm and opaque; thicker steaks may need 7–8 minutes per side. Brush with smoky honey-soy marinade as they finish and garnish with chopped cilantro.

    Snapper

    Grill skin-side down 3–5 minutes, flip and grill 2–4 minutes more until flesh is opaque and flakes easily. Serve with Mediterranean citrus-herb finishing spoonfuls and lemon.

    Trout

    If whole, grill 6–8 minutes per side depending on size; if fillets, 3–5 minutes per side. Stuff whole trout cavity with lemon wheels and herbs before grilling. Finish with capers and a drizzle of butter.

    Mackerel

    Because mackerel is oily and flavorful, grill skin-side down 4–5 minutes and flip 1–2 minutes. Serve with a squeeze of lemon and a light brush of chili-citrus marinade.

Buffet Setup & Service

    Arrange cooked fish on warm serving trays, grouping by variety and labeling each type. Keep trays lightly tented or over a low heat source to maintain temperature.

    Provide finishing options at the buffet: small bowls of herb butter, lemon wheels, extra chili-lime seasoning, tartar sauce, and mango chutney. Place utensils for self-service and small plates for portioning.

    Replenish fish in batches: grill additional portions in cycles so freshly grilled fish can replace empty trays. Keep cooked fish no longer than 2 hours on the buffet; refresh frequently to keep quality high.

Clean-up & Storage

    Cool leftover fish to room temperature no longer than 2 hours after service, then refrigerate in shallow airtight containers up to 2–3 days. Reheat gently in a low oven (275°F / 135°C) wrapped in foil with a splash of water or stock if needed.
