    Prepare and sweat eggplant

    Trim the eggplants and slice into 1/4–1/2 inch (6–12 mm) rounds or 1/2-inch lengthwise slices. Lay them in a single layer on a rack or tray, sprinkle both sides with 1 tablespoon kosher salt, and let sit 20–30 minutes to draw out bitterness and moisture. After sweating, rinse lightly under cold water and pat dry thoroughly with paper towels.

    Set up dredging station

    Place the flour and optional cornmeal mixed with 1 tsp black pepper in a shallow dish. In another shallow bowl, whisk the 2 eggs with 3 tablespoons milk or water until combined.

    Coat the eggplant

    Working in batches, dredge each eggplant slice first in flour (shake off excess), then into the egg wash, then back into the flour mixture for a light, even coating. Place coated slices on a plate until ready to fry.

    Shallow-fry until golden

    Heat a large skillet over medium heat and add 3/4 cup vegetable oil (enough to coat the bottom ~1/4 inch). When oil is hot (a pinhead of batter sizzles), add slices in a single layer without crowding. Fry 2–3 minutes per side, until deep golden and crisp. Transfer to a paper-towel-lined tray and season lightly with salt while hot. Repeat with remaining slices, replenishing oil as needed.

Special Flavorful Sauce

    Sweat aromatics

    While frying the final batch of eggplant, heat 2 tablespoons olive oil in a separate saucepan over medium heat. Add the finely minced shallot (or onion) and cook 2–3 minutes until softened and translucent. Add the minced garlic and cook 30–45 seconds until fragrant, stirring so it does not brown.

    Build the sauce

    Stir in 2 tablespoons tomato paste and cook 1 minute to deepen the flavor. Add 1 cup crushed tomatoes and 1/2 cup stock, stirring to combine. Add 1 teaspoon red wine vinegar, 1 teaspoon soy sauce, 1 teaspoon brown sugar, 1/2 teaspoon smoked paprika, 1/4 teaspoon ground cumin, and 1/4 teaspoon red pepper flakes (if using). Bring to a gentle simmer.

    Simmer to concentrate

    Reduce heat to low and simmer the sauce 8–10 minutes, stirring occasionally, until slightly reduced and glossy. Taste and adjust seasoning with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1 teaspoon lemon juice for brightness.

    Finish with herbs

    Stir 1 tablespoon chopped fresh parsley and optional 1 tablespoon chopped basil or mint into the sauce off the heat, reserving the remaining parsley for garnish.

Assembly & Garnish

    Gently nestle the fried eggplant slices into the warm sauce in a single or slightly overlapping layer so each piece is coated. Spoon sauce over the top and simmer together 1–2 minutes so flavors meld.

    Transfer to a serving platter or individual plates. Sprinkle remaining 1 tablespoon chopped parsley and optional toasted pine nuts or chopped walnuts over the top. Serve warm as a main with rice or crusty bread, or as a side/appetizer.

    Leftovers: refrigerate in an airtight container up to 3 days. Reheat gently in a skillet over low heat so eggplant doesn’t become soggy; add a splash of stock if needed.
