Crispy Cauliflower

    Prep cauliflower

    Cut a 1 lb head of cauliflower into bite-size florets (about 1–1.5 inch pieces). Rinse and pat dry thoroughly. Excess moisture prevents crisping.

    Make batter

    In a medium bowl combine 3 tbs all-purpose flour, 2 tbs cornstarch, 1 tsp baking powder, 1 tsp garlic powder, 1 tsp smoked paprika, 1 tsp salt and 1/2 tsp black pepper. Whisk to combine. Gradually add 3 tbs cold sparkling water, whisking until a smooth slightly thick batter forms. Batter should coat but not be overly heavy—add up to 1 tbs more water if necessary.

    Coat cauliflower

    Heat 2 cups neutral oil in a medium heavy-bottomed skillet or pot to 350°F (175°C) or until a small drop of batter sizzles and rises. Working in batches to avoid crowding, toss florets in the batter so each piece is evenly coated, letting excess drip off back into the bowl.

    Fry until golden

    Carefully lower battered florets into hot oil. Fry 3–4 minutes per batch, turning once, until golden brown and crisp. Use a slotted spoon to transfer fried cauliflower to a paper towel–lined tray to drain. Keep cooked batches warm on a rack in a 200°F (95°C) oven while you finish remaining batches.

    Optional toss

    If you want a light sheen or slightly more hold for toppings, place drained cauliflower in a large bowl, drizzle 1 tsp vegetable oil, and gently toss to coat.

Special Ranch Dressing

    While the cauliflower fries, make the ranch dressing. In a bowl combine 1/2 cup mayonnaise, 1/4 cup sour cream and 1/4 cup buttermilk. Stir in 1 tbs chopped dill, 1 tbs chopped chives, 1 tbs chopped parsley, 1 tsp minced garlic, 1/2 tsp onion powder, 1 tsp lemon juice, 1/2 tsp apple cider vinegar, 1/2 tsp salt, 1/4 tsp black pepper and 1/4 tsp hot sauce if using. Whisk until smooth. Taste and adjust seasoning or consistency with extra buttermilk (1 tsp at a time) if you prefer a thinner dip. Refrigerate until ready to serve so flavors meld (10–15 minutes minimum).

Mixed Nuts Topping

    Toast and glaze nuts: In a small skillet over medium heat melt 1 tsp butter. Add 3/4 cup roughly chopped mixed nuts and 1 tsp honey. Stir constantly 2–3 minutes until nuts are fragrant and honey melts and coats nuts. Sprinkle 1/4 tsp smoked paprika and 1/4 tsp salt, stir for 30 seconds more. Transfer to a small plate to cool—nuts will crisp as they cool.

    If you prefer a crunchier texture, spread the coated nuts on a parchment-lined sheet and toast in a 350°F (175°C) oven for 6–8 minutes, watching carefully to prevent burning.

Finish & Serve

    Assemble: Arrange crispy cauliflower on a serving platter. Spoon or drizzle special ranch dressing over the florets, or serve the dressing on the side for dipping.

    Scatter the cooled mixed nuts evenly over the cauliflower so each bite gets some crunch. Sprinkle 1 tbs chopped fresh parsley and serve with lemon wedges to squeeze over as desired.

    Serve immediately so the cauliflower remains crispy. Leftovers: store dressing separately; keep fried cauliflower in an airtight container in the refrigerator up to 2 days and re-crisp in a 400°F (200°C) oven for 6–8 minutes.
